Chicken or Turkey Dressing

Ingredients
  

  • 1 Qt Water
  • 1 loaf Dried Bread
  • 3 Eggs Beaten
  • 1/2 cup Milk
  • 1/2 Onion Chopped
  • 1 or 2 Stalks Celery
  • 1 tsp Thyme Leaves
  • 1 tsp Marjoram Leaves
  • 1 tsp Parsley Flakes
  • 1 tsp Tarragon Leaves
  • 1 tsp Poultry Seasoning

Instructions
 

  • Cook chicken or turkey neck, and giblets in at least 1 qt. water until they are tender and cooked through. Cut meat and giblets up and set aside. Crumble enough dried bread and/or cornbread up to amount to at least 1 loaf of dried bread. Add broth. Chop ½ onion and 1 or 2 stalks of celery and cook in ½ cup milk until tender. Add onion, celery and milk mixture to the bread crumb and broth mixture. Add 3 beaten eggs and salt and pepper to taste. Add about 3 TBS rubbed sage. Add 1 teaspoon each of thyme leaves, marjoram leaves, parsley flakes, tarragon leaves and poultry seasoning. If the mixture is not somewhat “soupy” then add enough milk and extra broth to add extra moisture. Cover and bake at 350ºF for 1 hour or until knife inserted in the middle comes out clean. Uncover and bake another 15-minutes to sear over the top.
